How to cook Zucchini Curry Indian style
If you like Turai/tori , you will love this Indian style made zucchini recipe.
Zucchini has same feel and texture as turai. Turai is also known as ridge gourd and similar to zucchini.
Zucchini is low in calories and versatile vegetable.

INGREDIENTS

2 tbsp clarified butter / ghee

2 cup zucchini

2 tsp cumin

1 tsp ginger
-
1/2 cup onion

1 cup tomato
-
1 tsp green chili
-
1/2 tsp turmeric powder

1 tsp red chili powder
-
1 tsp coriander powder
-
1 tsp salt
INSTRUCTIONS
- Add clarified butter in a pan and let it get hot.
- Add cumin seeds and let it crackle it.
- Add ginger and saute for 1 min.
- Add onion and cook for 2-3 min.
- Add Tomato and add green chili (optional)
- Cook until oil separates
- Add dry spices - turmeric powder , red chili powder , coriander powder and salt
- Cook the spices for 2-3 min , add water if it starts burning.
- Add zucchini and mix it with all the spices.
- Cover and cook for 2-3 minutes , the zucchini will leave its water.
- Add water as per your liking gravy consistency
- Cook for another 2-3 min and the dish is ready.
- Enjoy with roti(Indian bread).
